Because they must be grown underground near certain tree roots, and require several years to mature, truffles are very difficult to harvest. Specially trained dogs and/or pigs are used to harvest truffles. For optimum flavor, fresh truffles should be eaten within one week after they have been harvested. The finest truffles are grown in Italy or France, and have a very short shelf life once imported into the USA.

As explained above, fresh truffles should be eaten within one week after they have been harvested. Tartufi Bianconi truffle sauces, however, are packaged as soon as they are harvested and retain their unique truffle flavor and aroma for more than 2 years. As a result, packaged truffle sauces are much less expensive than fresh truffles. Although fresh white truffles typically cost $4,000 per pound or more when in season, a small 2.8 oz. jar of white truffle sauce (salsa bianca) costs $12 and is available all year long. Once a jar of truffle sauce has been opened, however, it must be stored in a refrigerator and consumed within 5-6 days.
