Award-Winning Tartufata
Ingredients
1 1/2 pounds boneless and skinless chicken breast or thighs
4 tbsp. tartufata
4-5 cloves of garlic
1 medium onion - chopped
4 tbsp. of grated parmesan or pecorino romano cheese
2 tbsp. extra virgin olive oil (EVOO)
2 tbsp. chicken stock
Salt and pepper as desired

Preparation
Use 1 tbsp. of extra virgin olive oil (EVOO) to coat chicken.
Season chicken with salt and pepper.
Saute garlic and onions in 1 tbsp. of EVOO until golden brown, approximately 2-3 minutes.
Add chicken and pan for approximately 10 minutes each side.
Mix tartufata, grated cheese, chicken broth and remaining EVOO in a small mixing bowl
Slowly stir in tartufata mixture and continue cooking for 10 minutes at medium heat.
Transfer to serving dish and serve immediately.
