Truffled Turkey Thighs

Ingredients

2 turkey thighs

4 cloves of crushed garlic

2 tbsp. Balsamic vinegar

2 tbsp. Extra Virgin Olive Oil

1 tsp. Blue Truffle truffle salt

1 tsp. Blue Truffle black truffle oil

1 lb baby spinach

2 tomatoes, diced

4 frying peppers - diced

1 tsp. black pepper - coursely ground

Optional: 1-2 hot peppers - diced or 1 tsp. red pepper flakes

Preparation Instructions

Heat the oven to 375 degrees.

Combine crushed garlic, balsamic vinegar, and extra virgin olive oil in a small bowl. Mix and coat turkey thighs.

Place baby spinach, peppers, tomatoes and turkey thighs in an oiled baking pan and bake at 375 degrees for about 30 minutes, or until cooked through.

Drizzle truffle oil over baked turkey thighs.

Season with truffle salt and black pepper.

Serve immediately.
