Award-Winning Tartufata
Ingredients
1 1/2 pounds turkey breast or thighs (preferably with skin and bones)
4 tbsp. tartufata
2 tbsp. of grated parmesan or pecorino romano cheese
1 tbsp. extra virgin olive oil (EVOO)
Salt and pepper as desired
Sauteed Vegetables (Optional)
Tartufata can be used by itself straight from the jar. For additional flavors, any combination of sauteed vegetables can mixed with tarfuata (after the vegetables have been sauteed).

2 tbsp. chicken stock
4-5 cloves of garlic
2 frying and/or hot peppers - sliced
2 carrots - sliced
1 medium onion - sliced

Preparation
Pre-heat oven to 350 degrees F.
Coat turkey with olive oil.
Season turkey with salt and pepper.
Roast turkey in oven for approximately 45 minutes until done.
Sauteed Vegerables (Optional):
Saute garlic in olive oil (EVOO) until golden brown for 1-2 minutes.5>
Stir in peppers, carrots, and onion cook on medium heat for about 5 minutes.
Slowly stir in chicken broth and continue cooking for 2-3 minutes on low heat.
Remove turkey from oven and let cool for 10 minutes.
Slice turkey and remove any unwanted skin or bones.
Mix sliced turkey with tartufata, grated cheese and any optional sauteed vegetables.
Transfer to serving dish and serve immediately.
